Eggless Carrot Cupcakes

Ingredients  
  •        Baking powder: 1, ½ tsp
  •        Unsweetened applesauce:1/2 cup
  •        Flour: 2, ½ cups
  •        Sugar:3/4 cup
  •        Baking soda:2 tsp
  •        Cinnamon:1, ½ tsp
  •        Nutmeg: ½ tsp
  •        Salt: ½ tsp
  •        Canola oil:1/4 cup
  •        Carrots, grated:2 cup
  •        Crushed pineapple:1 cup
Eggless Carrot Cupcakes

   Directions

  1. Mix flour, sugar, cinnamon, nutmeg, salt and baking soda.
  2. Mix baking soda and apple sauce in a separate bowl.
  3. Add oil pineapple carrots and apple sauce mixture and mix well.
  4. Put the mixture in 24 cupcake liners.
  5. Bake at 325◦F for 30 minutes.
  6. Top with icing prepared with sugar, butter, vanilla and water.
