Ingredients
- Baking powder: 1, ½ tsp
- Unsweetened applesauce:1/2 cup
- Flour: 2, ½ cups
- Sugar:3/4 cup
- Baking soda:2 tsp
- Cinnamon:1, ½ tsp
- Nutmeg: ½ tsp
- Salt: ½ tsp
- Canola oil:1/4 cup
- Carrots, grated:2 cup
- Crushed pineapple:1 cup
Directions
- Mix flour, sugar, cinnamon, nutmeg, salt and baking soda.
- Mix baking soda and apple sauce in a separate bowl.
- Add oil pineapple carrots and apple sauce mixture and mix well.
- Put the mixture in 24 cupcake liners.
- Bake at 325◦F for 30 minutes.
- Top with icing prepared with sugar, butter, vanilla and water.
