Rice kheer or rice pudding is one of the best-loved Pakistani desserts. It only requires four ingredients rice, milk, sugar and cardamom to make the basic recipe. But the rest of the ingredients are used for garnishing and presentation. It has been a popular and common dessert for celebrations, parties and special festivals and occasions. Kheer has other variations too. Sometimes a small quantity of grated carrots is added to the kheer recipe to make Gajrela or carrot kheer. The rest of the ingredients remain the same.

Ingredients for Kheer
1/4 cup rice(soaked in water)
1,1/2 kg of milk
1/2 cup sugar
1/2 cup sugar
1/4 tsp cardamom powder
1/4 cup almonds and pistachios(flakes)
1 tbsp oil to fry nuts
1 tbsp oil to fry nuts
RECIPE
- Discard most of the water in which rice is soaked and grind rice in 1/4 cup water for a few seconds to break the grain into two or three pieces.
- Bring milk to a boiling point in a pan and add rice and cardamom powder.
- Keep stirring on a medium flame.
- Add sugar.
- Keep stirring until the rice is soft and the milk thickens.
- The kheer is cooked when milk and rice are well combined together and are thick enough to fall in clumps from the ladle.
- Fry flaked almonds and pistachios in a little bit of oil and pour over the kheer.
- Save some dry fruit for garnishing.
- Let the kheer cool down and refrigerate before serving.
