Ingredients
Plain Flour: 275g or 1,3/8 cup
Eggs: 2
Baking Soda: 1 level teaspoon
Caster Sugar: 125 grams
Butter: 125 grams (room temperature)
Yogurt: 125 grams
Orange Juice: 2 tablespoon
Dates: 50 grams (chopped)
Chopped Walnuts: 100 grams
The rind of 1 Orange
Eggs: 2

The rind of 1 Orange
Directions
1. Preheat oven to 180°C or 350°F.
2. Lightly grease and line 2lb loaf baking tin.
3. Beat sugar and butter together until smooth.
4. Add yogurt, eggs, orange rind and juice.
5. Beat well.
6. Now add flour and sifted baking soda.
7. Beat at low speed.
8. Lastly, add the dates and walnuts and stir gently.
9. Transfer the mixture to the prepared tin and bake for 40- 45 minutes until it rises and a skewer or knife comes out clean on insertion.
10. Take out from the oven and allow standing for few minutes before removing from the baking tin.
Tip:
Use the right measuring scoops for the ingredients.
Baking soda should be fresh.
