Dry Fruit Cake


Dried apricots: 1 cup
Dates: 1 cup
Nuts: 1,1/2 cups
Candied pineapple: 1 cups 
Red and green cherries: 1 cup
All-purpose flour:1,1/2 cup
Eggs: 3 large
Sugar: ¾ cup
Baking powder: ½ teaspoon
Salt: ½ teaspoon
Vanilla: 1,1/2 teaspoon

Directions:

1.       Preheat oven on 300 F. Grease a bread pan.
2.       Sieve salt, flour and baking powder.
3.       Beat eggs, add all other ingredients and combine.
4.       Transfer the mixture in a pan.
5.       Bake for one and a half hours or until firm.
6.       You can cover the cake for the last 30 minutes of baking to avoid excessive browning.
7.       Remove the cake from the oven and brush with corn syrup for a glossy look.
8.       Leave the cake to cool before slicing.
